Easy Creamy Avocado Toast Topped with Fluffy Grated Egg
Ingredients
- 4 Hardboiled Eggs
- 1 Large avocado or 2 small
- 2 Slices of large, thick bread, or 4 smaller slices
- Toppings of choice: Salt, pepper, garlic powder, everything bagel seasoning, etc…
Directions
- Slice avocado and remove the pit, set aside.
- Toast bread until golden brown and crunchy.
- Mash avocado and add to the bread.
- Grate hardboiled egg and divide between slices of bread.
- Finish by topping with a generous pinch or salt and pepper. Enjoy!

- Bowl of cold water and ice
- Slotted spoon
Ingredients
- Large Eggs (However many you want to make)
Directions
- Add eggs to a small/medium pot and cover in cold water until the water level covers eggs just about an inch.
- Turn on the stove and bring the pot to a rolling boil.
- As soon as it boils, cover with a lid and turn off the stove.
- Let sit for 12 minutes, then use slotted spoon to move eggs to the ice bath.
- Allow to sit for 10-15 minutes before peeling.
